What does this mean? It keeps going up and down while I'm driving

That’s your oil pressure gauge, and it looks like you’re losing oil. If you keep driving, your engine will be toast.

I’ve never seen a car with an oil temperature gauge.

I’ve installed a few. They’re nice to have but usually aftermarket. I wouldn’t be surprised to see one in a big truck like an F350.

Maybe, but working with air-cooled engines got me into the habit of keeping an eye on oil temp. In those engines, you watch oil temp, exhaust temp, and cylinder head temp.

Could be a bad sensor too.

You should see some pressure at idle and at least half on the gauge when the engine is under load. Some newer vehicles have dummy gauges that always show half pressure until there’s an issue. They introduced those to reduce complaints like OP’s. I’m guessing you’re seeing 0 psi because you haven’t started the engine yet.

Check your oil and coolant right away. If you keep driving, you could end up with a blown head, cracked block, or worse. And while you’re at it, top off your windshield washer fluid.

That’s likely your oil pump. If it’s failing, you’re looking at needing a new engine. These models are known for this.
